There was nothing interesting that I saw, except two squirrels that scared the sh#* out of me. I did see two guys running on my way back. I felt a little jealous and wanted to shout after them, "I run too! Just not today!" But I guess it didn't really matter.
On my way back home I realized that I hadn't eaten all day. WHAT?!?! Me, not eaten? I make fun of people that do that. So the last mile home I fantasized about all of the things I could eat when I got back.
Kevin's friend brought some soda over here. I tried a Mello Yello Zero. Not a fan. I like regular Mello Yello, but this stuff tasted almost syrupy.
Quick Potato Kale Dish |
5 boiled potatoes cut into inch size cubes
3 cups kale
1 Tbsp. Extra Virgin Olive Oil
1 cup vegetable broth
1 onion diced
3 cloves garlic diced
1/2 tsp. fennel seeds
1/2 tsp. sage
1/2 tsp. thyme
Heat pan on medium and add the oil. Heat the oil and add the onions. Cook the onions until soft and yellow. Add the garlic. Cook until soft, about 2-3 minutes. Add about half of the vegetable broth and heat to boiling. Add the fennel, sage, and thyme. Let boil for about a minute. Lower heat and add the potatoes and kale. Pour the rest of the vegetable broth over the top. Cover and cook for about twenty minutes on medium low heat. Ready to eat!
*I don't add salt since the vegetable broth is loaded with it. You can also add pepper for flavor, but I'm not big on it.
It really hit the spot on this chilly day.
